Shrove Tuesday / Pancake Day – 13th February


The word shrove is a form of the English word ‘shrive’, which means to obtain absolution for one's sins by way of Confession and doing penance.

Thus Shrove Tuesday gets its name from the custom for Christians to be "shriven" before the start of Lent.

Pancake Day, also known as Shrove Tuesday, is the feast day immediately before Ash Wednesday which marks the start of the 40 days of Lent that lead up to Easter.

Because its date is determined by that of Easter Sunday, Pancake Day is a moveable feast.

It’s believed that the Romans were the first to make pancakes.

In the 15th century, Romans would eat sweet and savoury dishes of a meal called Alita Dolcia (Another Sweet) made from milk, flour, eggs, honey and spices.

All across Europe meals recognisable as different forms of pancake are created by adding ingredients such as wheat, flour, buckwheat, or cornmeal to the ancient ingredients; the Elizabethans ate them flavoured with spices, rosewater, sherry, and apples.

Once you have your basic pancake cooked in a pan, the modern tradition is to toss them and catch them back in the pan again. Be careful they don’t stick to the ceiling!

Any filling can be used, just depends on your taste. However, the most common fillings are…

  1. Lemon and Sugar

  2. Bananas

  3. Chocolate Spread

  4. Jam

  5. Frozen berries, heated with a little sugar to make a sauce

  6. Honey

  7. Apple Sauce

  8. Even, Yoghurt!

Here’s how to make them from scratch…

Ingredients:

  • 100g plain flour

  • 2 large eggs

  • 300ml milk

  • 1 tbsp sunflower or vegetable oil, plus a little extra for frying

  1. Put the flour, eggs, milk, 1 tbsp oil and a pinch of salt into a bowl or large jug, then whisk to a smooth batter. Set aside for 30 mins to rest if you have time, or start cooking straight away.

  2. Set a medium frying pan or crêpe pan over a medium heat and carefully wipe it with some oiled kitchen paper. When hot, cook your pancakes for 1 min on each side until golden, keeping them warm in a low oven as you go.

  3. Serve with lemon wedges and sugar, or your favourite filling.

Makes 12 pancakes.
